To reiterate what I was saying earlier, I still think what “development” we got in relation to Daenerys' madness was absolutely atrocious. So much that it felt like D&D were writing a baby's first fallen hero from a (bad) JRPG or something.
But basically, from the hack writing we got, Daenerys seemed to “snap” from a combination all the shit she's been through so far (being married off as meat, having a stillborn baby, losing two of her dragons who replaced said baby in a way for her, etc etc) and Jon Snow's superior claim which pretty much invalidates all the work she's spent on trying to reclaim the throne.
Seeing her best friend Missandei die would have been one of the last straws for her, and when she heard the bells of King's Landing signifying the surrender, and viewing (for the first time) most of this city and the Red Keep that represents everything she's lost in her life, she decides to burn it all down.
Now you could definitely say this is awfully executed, and it was. Daenerys essentially “seemed” to go nuts for almost no reason at all, and god damn did Varys' death happen too fast in the most illogical manner. But I don't necessarily think the elements for her madness weren't there, they've just been gutted the same way as the rest of the plot.
If we ever see the books complete, maybe they'll handle this whole thing better. We can hope, anyway.
