I didn't really think so, but I was never much of a Stannis fan. I think the incident was colored by some people's love for him. If we go simply by what is on the show. This is what we know. 1. He is the finest military commander in the realms. Its said several times. 2. He survived for a year, during a siege, by eating rats and bookbindings etc. 3. He wants the throne and he wants to keep it. Now this is where the show Makes a U-turn of the information they have already given the viewer. 1. He thinks it is smart to attack a fortified castle with 200 men. No siege engines. No ladders. Nothing. Earlier in the show he makes a point of not being able to attack king's landing because he has too few men etc....Something clearly changed. 2. He kills a few thousand horses for food, because his army is starving. 2 days later he burns his daughter because his army is starving. Pretty dumb. 3. If you want to keep your heir alive, you don't bring her along when you head out to war. That alone is damn dumb. And then he burns her, for no good reason, really (see point 2). That bit there was added for one reason and that is shock value. It is the same reason why Myrcella got killed and why Sansa got raped.
