And another excellent fanfiction to the list: The White Rose of Vermillion

An AU fic set in a medieval version that eschews some of the typical RWBY stuff (no over-the-top ridiculous weapons, no dust and no aura/semblance, but there are Grimm and they still are the scourge of man). Takes a fair amount of inspiration from recent novels like 'A Song of Ice and Fire' for some of its themes (changing POVs, political machinations, massive fortifications to hold back the Grimm, etc.). Also notably is a fair amount of original characters and the obvious non-canon treatment for a number of others.

Again, in tandem with the interesting concept I recommend this one because it is extremely well written. Do unconditionally recommend. A fair warning though, the mentioned non-canon treatment is rather prominent for one case and the fic IS gritty as its setting would indicate ... it's definately not pulling its punches when it comes to that character!
